Chocolate & Red Wine Cake Recipe

Makes 10 portions

Ingredients

110g unsalted butter
275g dark brown sugar
5g salt
2 whole eggs
175g self raising flour
2g bicarb soda
5g baking powder
50g dark cocoa powder
200g red wine

Frosting:

100g unsalted butter
300g icing sugar
200g red wine, reduced to 50g
15g cocoa powder

To make frosting:

Cream butter and icing sugar together then add red wine, beating until smooth and velvety. Fold in the cocoa powder

Method

  • Preheat oven to 170C and line a 30cmX11cmX2.5cm baking tray
  • Place butter, sugar and salt in a bowl and cream. Add the eggs slowly to emulsify
  • Sieve flour, bicarb, baking powder and cocoa together and fold in slowly 1/3 at a time. Mix well before adding the red wine
  • Pour mixture into the baking tray and bake for 20-25 minutes
  • Allow to cool then cover evenly with the frosting, allowing to set before portioning
